Epley's fish and fry...and they do it all well

HANNIBAL, MO. -- A Hannibal family is getting back to its roots with the opening of a new fish market.  Epley's Fisheries opened Monday on Mark Twain Avenue in Hannibal.

It offers fresh fish caught off the Mississippi River at low prices.  This isn't the first time this family has operated a fish market.

Owner Rick Epley grew up in the fishing business when his grandparents owned Main Fisheries in East Hannibal. When it was destroyed in the '93 Flood, the family never re-opened the popular business. But after Rick Epley was laid off from work, he and his family decided to go into business for themselves.

He says his shop has something you can't easily find - fresh fish at a reasonable price.  Epley also scores buffalo carp by hand.

We caught up with the Epley's on the river  Tuesday.  On Wednesday the family cooked up some fish.  Even people who normally don't like fish like their recipe. 

Here's the Famous Epley Family recipe for fish. 

Ingredients

Fry Krisp Batter Mix

1/3 cup cornmeal

1 Tsp garlic powder

1 Tsp onion powder

1 Tsp season salt

1 Tsp black pepper

1 Tsp Salt

Optional (but suggested) pinch or two of cajun seasoning/hot pepper seasoning

Put some Fry Krisp Batter Mix in a bowl and stir in ingredients.  Batter fish.  Heat oil to 325 Degrees.  Do not go over 400 degrees because it will burn the oil.  Don't put fish in until oil is at correct temperature. Epley suggests testing oil with a french fry.  Cook a small amount as a sample.

Fry until golden brown.  Salt and serve.
