Easy summer strawberry recipes

This weekend's Strawberry Festival at Ellington Road Church inspired us to bring you some easy to make strawberry recipes.

This weekend's Strawberry Festival at Ellington Road Church inspired us to bring you some easy to make strawberry recipes.

 

Let's start out with the traditional Strawberry Shortcake.

 

We just used a simple shortcake recipe made from the back of the Bisquick box.

 

4 cups sliced fresh strawberries
1/2 cup sugar
2 1/3 Original Bisquick mix
1/3 cup milk
3 tbsp sugar
3 tbsp butter or margarine, melted
1 container (8 oz) frozen, whipped topping, thawed



Mix the strawberries and 1/2 cup sugar; set aside. Heat oven to 425 F.

 

Stir in Bisquick mix, milk, 3 tbsp of sugar and the melted butter until a soft dough forms. Drop 6 spoonfuls onto an ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Split warm shortcakes; fill and top with strawberries and whipped topping.

 

Another easy recipe is Strawberry Dip.

 

7 oz jar of marshmallow fluff
8 oz cream cheese, softened

 

Stir together and you have a dip for your strawberries!

 

Who can pass up a Strawberry Parfait? This recipe comes courtesy of Cooking Light.

 

4 cups sliced strawberries, divided
1/4 cup granulated sugar
1 cup fat-free ricotta cheese
1/2 cup (4 ounces) 1/3-less-fat cream cheese, softened
1/4 cup powdered sugar
1 tablespoon water
1 teaspoon vanilla extract
1 cup amaretti cookie crumbs (about 8 cookies)
1/2 cup frozen reduced-calorie whipped topping, thawed
2 tablespoons slivered almonds, toasted

 

Place 2 cups of strawberry slices and granulated sugar in a blender or food processor, and process until smooth. Set strawberry puree aside.

 

Combine ricotta and next 4 ingredients (ricotta through vanilla) in a medium bowl; stir well with a whisk. Spoon 2 tablespoons cookie crumbs into each of 4 parfait glasses. Top each portion with 2 tablespoons strawberry puree, 1/4 cup strawberry slices, and 3 tablespoons ricotta mixture; repeat the layers. Drizzle the remaining strawberry puree over each serving. Chill for 2 hours. Top each parfait with 2 tablespoons whipped topping and 1 1/2 teaspoons almonds.

 

Another simple recipe is a No-Bake Strawberry Pie.

 

1/4 cup water
1 box instant strawberry Jell-O mix
8 oz whipped topping
2 - 6 oz containers of strawberry yogurt

 

Bring the 1/4 cup of water to a boil. Dissolve the instant strawberry Jell-O mix in the water. Mix the whipped topping and strawberry yogurt. Add in the Jell-O mixture.

 

Pour over a chocolate pie crust. Chill in refrigerator for a few hours.

 

One more item that is especially great for parties are Cream-Filled Strawberries. This comes courtesy of Taste of Home.

 

18 large fresh strawberries
1 cup cold fat-free milk
1 package sugar-free instant vanilla pudding mix
2 cups reduced-fat whipped topping
1/4 teaspoon almond extract

 

Remove stems from strawberries; cut a deep "X" in the top of each berry. Spread berries apart.

 

In a large bowl, whisk milk and pudding mix for 2 minutes. Fold in whipped topping and almond extract. Pipe or spoon about 5 teaspoons into each berry. Chill until serving.

 

If you missed this weekend's Strawberry Festival at Ellington Road Church, you have another chance this coming weekend at Melrose Chapel United Methodist Church.

 

It's their 138th annual festival. Their Strawberry Festival will be held this Saturday, June 2 from 3 to 7 p.m. at the church at 3600 Payson Road in Quincy.
